We are all used to eating the normal bland gravy with turkey
each Christmas gravy granules from a tin… This year, why not try something new?
Instead of the usual routine of pouring gravy granules from a tin into hot
water and slurping the watering tasteless stuff, you can do try this to delight
your family and friends…
Ingredients
10 pieces of
medium pieces of chicken without skin and fat
3-4 tbsp olive oil
3-4 medium sized onions
1 tsp turmeric
powder
1 scotch bonnet chilli finely chopped or red chilli powder
1 small piece of
ginger
5 cloves of garlic
2-3 bay leaves
4-5 green chillies
6-7 curry leaves
Gravy thickener
(ground rice or flour is good)
A blender or food processor
To marinade the chicken:
Blend half of the chilli, onion, garlic, ginger and green
peppers in the food processor or blender for two minutes. Add the mixture to
the pieces of chicken and let it marinate for about 2 hours.

Method
STEP 1: Boil the chicken
for an hour and let it simmer in the last 10 minutes. Drain the juice and grill
the chicken. Slice the remaining onions finely. Add 2-tbsps of the oil in frying
pan or saucepan and fry the onions on medium heat for about two minutes. Keep stirring
then, add the finely chopped chillies and the ginger/ garlic paste and fry for
another two minutes. Now add the rest of the ingredients and cook properly. Add
seas salt to taste.
STEP 2:
Remove the pan form the cooker and leave to cool down. Next
add a little water to the mixture and pour it back into the blende to grind it
to a smooth paste. Add the flour or ground rice to the sauce and let it simmer
on low heat for another 15 minutes.
Your spicy gravy ready to eat! Serve with roast potatoes,
vegetables and turkey. Enjoy!
